During my Vegan experiment, loads of websites and books suggested these energy balls asa tasty little sweet treat, great for boosting energy levels and still relatively healthy- win/win or what?! Although there are lots of different recipes for energy balls, I fancied this one the most and hopefully you will too!
Ingredients:
Peanut Butter
Dried fruit and nuts (of your choice)
Golden or maple syrup
Method:
Separate your fruit and nuts if they aren’t already (I used a mixed fruit and nut packet) , and roughly blend your nuts (by hand or in a food processor).
In a bowl put 2Tbs of Peanut Butter and 2 Tbs of your chosen syrup (I used golden syrup) and mix together, (amend the measurements to your taste).
Slowly add the nuts and fruit until your mixture becomes a thick paste (like cookie dough, depending on how much peanut butter and syrup you put in).
When your mixture is combined, roll out 8 energy balls.
Place them on baking paper, in a tub or plate and place them in the fridge to set for about 30mins – 1hour.
If you’re not vegan but would still like the try this recipe, try adding chocolate, or something else that you enjoy snacking on!
